  • Can I purchase a pig?
    Do you Sell Wessex Saddleback Pigs for Breeding? We do not currently have any pigs for sale. Our wessex saddleback pigs are fully registered by the Australian Pig Breeders Association (APBA). Can I purchase a whole pig? Pigs for market are sold at a minimum dressed weight of 45-50kg (whole carcuss or half carcuss). For restuarant wholesale rate, please contact us. We do not sell small suckling pigs for spit roasts. We would suggest purchasing a leg or shoulder of pork, which is approximately 6kg for spit roasting for a special occasion, please contact us to arrange. Sides of pork / bulk purchase As small scale producers we rely on a butcher to cut-up our pork, cryovac and prepare ready to sell at markets. These value add costs means that we currently do not have any offerings of bulk ordering or discounted sides of pork but we do hope this is something we may be able to provide in future.
  • Can I pre-order a particular cut of pork?
    Yes, we take orders for specific cuts of meat such as boston butt, whole pork belly. Pre-orders can be placed by email for customers familiar with our range and offerings. We would encourage new customers to visit us at the markets to see our full range of pork cuts and price list that we have available on a fortnightly basis. We look forward to meeting you at the markets and sharing our delicious pork. (Online ordering is not yet available)
  • Can I buy a live pig so I can kill it for meat?
    No. With the Wessex Saddleback breed being critically endangered, we have a policy of selling only registered stud animals that have passed our strict criteria and found to be suitable for breeding. Any animals not meeting this criteria are directed into our free range meat enterprise. This ensures that only the best animals are maintained for breeding purposes which helps maintain the integrity of the Wessex Saddleback breed for future generations. Sorry we do not currently have any pigs for sale.
  • Can I come to the farm to see the pigs?
    We will be scheduling a farm day visit soon, follow us on Facebook and Instagram for upcoming announcements.
  • Is the ham and bacon nitrate free?
    <h4 class="font_4">Yes, we provide our ham and bacon as nitrate free and preservative free. No other ingredients are used other than Australian salt for brining and woodchips for smoking process - triple smoked for a beautiful smoked flavour. This process cures, naturally preserves and cooks the pork.</h4>
  • Is there a difference in taste between male and female pigs?
    We do not castrate our male piglets, and do not have a problem with boar taint as the males are taken to market at 4-5months of age, before testosterone levels are produced Traditionally pancetta uses only the female leg of the animal, as it is believed that the female produces a sweeter tasting meat. Our fresh free range pork has a delicious flavour for either male/ female piglets and we assure you quality tasting 81 Acres pork is our priority.
